Remove the peel from the vegetables and cut them into very small cubes (brunoise). Chop the parsley and cut the chives into rolls.

Season the salmon slices with salt and pepper.

Put vegetable broth, white wine and vegetable cubes into a frying pan, let it boil up and make it light for about five minutes. Then add the salmon slices and cook for about four minutes with the lid closed on a low heat. Lift out and keep warm.

Cook the broth on a large fire for a good five minutes. Later add parsley and chives. Add the butter in flakes and add to the jus. Season to taste with salt and freshly ground pepper.

Arrange the salmon slices in warmed deep plates and pour the jus over them.

Serve with boiled potatoes.
