Instructions:

For the salmon tartare with lime yogurt and fennel, first finely chop the smoked salmon and mix with the remaining ingredients. Season to taste with salt and pepper.

Clean the fennel, setting aside the greens. Then finely slice or chop, knead well with the remaining ingredients and let sit for about 10 minutes.

Mix the yogurt with salt, pepper and lime juice and zest.

Arrange salmon tartare on plates and top with fennel salad, finish with the lime yogurt and fennel greens.
