Peel the garlic cloves. Cut out the greenish shoot. Finely crush with pepper and salt. Stir with egg yolk. Stir in oil drop by drop and add juice of one lemon from time to time. Stir until the sauce is thick and stiff. Add water at the end. Serve with fish, meat and vegetables.
