For the sauerkraut salad, drain the juice of the sauerkraut in a sieve and shred the cabbage.

Peel the onion and chop finely. Wash the radicchio, spin dry and cut into strips. Also wash the strawberries, remove the green and cut the strawberries in half. Wash the peppers, cut them in half, remove the seeds and dividers and cut into small cubes.

For the sauce, mix crème fraîche and sherry. Season with salt, pepper and honey.

Carefully mix the sauerkraut with the onion, radiccio, grapes and the diced peppers and marinate with the sherry-crème fraîche. Allow to marinate for a while.

Wash the lemon balm and pluck the leaves. Decorate the sauerkraut salad with the lemon balm.
