Try this delicious noodle dish:

Heat the oil in a wok. Add the shallots and green peppers. Stir-fry over high heat for 1 minute. Add red peppers and continue stirring until they begin to soften.

Cut scallops in half if very thick, otherwise whole. Add to wok form along with drained chestnuts. Meanwhile, stir-fry over high heat until scallops are cooked.

Add the remaining ingredients and stir-fry very briefly so that they are glazed by the sauce. Sprinkle with freshly chopped coriander and serve with long grain rice or noodles.
