For the Schwammerlletscho clean the mushrooms and cut them into slices. Peel and finely chop the onions.

Bell pepper clean and cut into strips, tomatoes peel and quarter. Fry the onion in oil, add the mushrooms and peppers.

Add the peeled, quartered tomatoes and mushrooms 10 minutes before they are cooked.

Sauté until done and season with salt, pepper and parsley. Serve the Schwammerlletscho with boiled potatoes.
