Instructions:

Wash the vegetables, peel the onion and also wash and dry the herbs.

Roughly cut the vegetables and weigh them, then put them into a blitz chopper or blender. Add 20% of the vegetable weight – (for 750 g of vegetables, this would be 150 g of salt) and blend everything well.

The mass draws some water because of the salt, which is an advantage because you can press it tightly into jars without any problems.

Store the jars in the refrigerator.
