Cream room-warm butter with a hand mixer, then carefully mix in first yolks and then egg whites. Season with salt and nutmeg and then add the semolina.

Using two spoons, make dumplings in the shape of zeppelins and cook them in boiling salted water for 5 minutes. Remove from heat and let them stand for about 10 minutes.

Divide the semolina dumplings among soup plates and pour hot beef broth over them.
