Semolina Pancake with Blueberries From the Steamer

Instructions:

Toast the semolina for the semolina pancake with blueberries in a coated pan without fat over medium heat until it begins to smell fragrant. Remove from heat and let cool. Sort out the blueberries, wash and drain. Scrape out the pulp from the vanilla bean.

Bring the milk to a boil with the vanilla pulp and pod, ginger and cinnamon. Stir in the semolina and boil until thick, stirring with a whisk, about 2 minutes. Remove the saucepan from the heat and remove the vanilla bean, ginger and cinnamon. Stir in lemon zest, orange juice and zest with egg yolks vigorously.

Add flour and rum and stir in. Beat egg whites with 1 pinch of salt until creamy, gradually add half of the sugar and continue beating until firm. Fold the beaten egg whites into the semolina mixture.

Melt two teaspoons of butter in the roaster and then spread the semolina mixture in it and sprinkle the blueberries on top.

Bake in the preheated Miele combi steam oven at the following setting:

1st step: upper-lower heat 200 °C – 75 % humidity – 10 minutes (preheat)2nd step: upper-lower heat 200 °C – 75 % humidity – 15 minutes.

Break the semolina pancake into bite-sized pieces using 2 wooden spatulas, add the remaining butter and sugar and caramelize the pancake while stirring on the stove.
