Pre-chill four champagne flutes well in the freezer. Meanwhile, in a vessel with a spout beak (measuring cup, etc.), whip the lemon ice until soft. Gradually stir in chilled vodka, liquid cream and Prosecco. Immediately divide among the iced champagne flutes. Be careful: the sgroppino will curdle if left longer.
