For the crumbly poppy seed strudel, quickly knead a cold yeast dough from flour, butter, sugar, yeast, milk, yolks and salt. Let the dough rest for about 25 minutes. Then cut into 2 parts and roll out into 2 rectangles (approx. 20×30 cm).

For the filling, bring the milk to the boil and stir in the poppy seeds. Bring to the boil briefly and remove from the heat. Stir in all other ingredients, mix well and season to taste.

Coat the dough with poppy seed filling, roll up and place on a greased baking sheet. Let rise again. Brush with egg and prick often with a fork and bake the crumbly poppy seed strudel at 180 degrees until it has a golden color.
