Peel the mango, remove the flesh and cut into 2 cm cubes. Halve the chili pepper lengthwise, remove the seeds and chop finely, as well as the shallot. Cut carrot into 3 mm thick sticks. Season shrimp with salt and pepper. Heat the sesame oil in a wok pan and fry the shrimp briefly on all sides. Remove and keep warm. Now sauté the mango cubes, shallots and carrot sticks in the wok. Season with coriander. Add turmeric, chicken soup and coconut milk. Mix in the shrimp along with the chopped chili and bring to a boil once. Arrange in bowls and sprinkle with coriander greens and shredded coconut before serving.
