For the shrimp in coconut sauce, mash two onions and finely chop one onion. Heat the butter and oil together over medium heat and sauté the chopped onions.

Add garam masala and fry for another minute. Add cardamom pods, chili, bay leaves, cloves, cinnamon bark and turmeric and the strained onions and roast everything again. Deglaze with the soup and coconut milk.

Add salt, pepper and sugar and let everything simmer on low heat for about 10 minutes. Add the shrimp and leave on the stove for another 10 minutes on low heat.

Just before serving, bring the shrimp in coconut sauce to the boil once briefly.
