1. rinse apples, cut into quarters, discard core and cut apples into very narrow wedges. Sprinkle sparingly with the juice of one lemon so that they do not turn brown. Cut the lettuce into small pieces, rinse the leaves and drain the water very thoroughly (preferably in a salad spinner).

Remove the skin from the onion and cut into very thin rings. Dill rinse, drain the water and chop the green finely. Drain the sild and cut into bite-sized pieces. Mix sour cream with pepper and dill, season lightly with salt and spread evenly on pumpernickel slices. Then arrange on each slice first apple wedge, then lamb’s lettuce leaves, sild pieces and onion rings. Arrange the sild bites on a platter for serving.

Spices offered, so that quite simply different bites with it cook. It looks beautiful when the little appetizers are served on a tray garnished with radishes, cornichons and red onion rings. Do as the Scandinavians do and offer an ice-cold aquavit with them. But it may also be a cool beer from German lands.
