Peel and seed the papayas and cut them into thick slices. Cut the chili peppers into fine rings and the young onion into diagonal slices. Finely chop the garlic. Season the skate fillets with salt and pepper and dust one side with cornflour. Heat a frying pan, pour in a little oil and fry the skate fillets in it, first on the floured side, for about 2 minutes. Turn, fry very briefly and place on a warmed plate. Meanwhile, in another pan, fry the papaya slices briefly in a little oil. Remove from heat again and mix with green onions, chili, garlic, fish sauce, sesame oil and juniper berries. Drizzle the finished fried skate wing fillets with it and garnish with cilantro.
