Roast sesame seeds in a frying pan without fat until light brown and cool. Clean radicchio and frisée, rinse and spin dry. Pluck basil leaves. Stir tomato juice and juice of one lemon with 4 tbsp olive oil, mustard and sesame seeds. Season well with salt and freshly ground pepper.

Clean the leek, rinse and cut only the white and light green into very narrow rings. Place in a colander. Rinse in cold water and drain. Heat the remaining olive oil in a frying pan and sauté the leeks in it for 2-3 minutes without coloring, season with salt and cool down.

Mix the tomato and lemon salad dressing with the lettuce and basil leaves. Serve the smoked goose breast with the lettuce and leek rings.
