For the snowman cookies, put Fini’s Feinstes flour in a bowl or on the work surface and mix with baking powder, powdered sugar, vanilla sugar, lemon zest and coconut. Make a well and add the finely diced butter and egg. Now knead all the ingredients by hand into a smooth dough.

Form the dough into a ball, wrap it in plastic wrap and let it rest in the refrigerator for at least 1 hour.

When the resting time is up, knead the dough again briefly.

Then roll out with a rolling pin on a floured work surface to a thickness of approx. 3-5 mm and cut out snowmen. Place the cookies on a baking tray covered with baking paper and bake in the preheated oven at 180 °C (top/bottom heat) on the middle shelf for about 8 minutes until golden brown under supervision.

Allow to cool.

For the glaze, sift the powdered sugar and mix with the egg whites to form a smooth, spreadable mixture (add a little more powdered sugar if necessary). Brush the snowmen with the glaze using a knife or palette and, if desired, sprinkle the snowman cookies with coconut.
