Sift ingredients into a large baking bowl. Take out a handful at a time again and trickle in so that the mixture is interspersed with air. Now add plenty of buttermilk so that the dough becomes soft. Knead the dough gently, too much kneading will make the dough hard, if not worked enough it will not rise enough. Form a round loaf about the thickness of your fist. Place loaf on a floured baking sheet and score the top crosswise with a lightly floured kitchen knife. Bake immediately in the oven at 230 °C for 30 to 45 min.

After baking, the loaf will sound hollow if you tap it with your fingers on the underside. After baking, when the bread is still warm, wrap it in a dish to prevent the crust from becoming too hard. (I moisten the dish a little bit and sprinkle it lightly).

You can substitute whole wheat flour for the white flour, in which case it is brown soda bread, or you can add 1/2 cup of raisins to the white bread, in which case this bread is called Spotted Dick.

Tip: You can also use the large, meatier raisins instead of raisins for once!
