Instructions:

Drain the sour cherries in a sieve. Whisk finely with the measured mass of cherry juice, brown sugar and amaretto. Pass through a sieve and pour into a gratin dish. Freeze in the freezer for one night.

Whip the whipped cream with the vanilla sugar and sugar until creamy and divide evenly among decorative glasses. Scrape the frozen sour cherry sorbet with a spoon and generously spread on the vanilla cream mold.
