For the spaghetti with ham and asparagus, put the spaghetti in boiling salted water, cut asparagus finger-length and cook extra with a pinch of sugar. Cook white asparagus for about 10 minutes.

Chop ham, sauté in olive oil, deglaze with whipping cream, add grated Parmesan cheese and the yolks, do not boil or the yolks will flocculate. Season and add cooked asparagus.

Arrange spaghetti on a plate, pour sauce over it.
