Spaghetti with Salmon and Zucchini

Cook the pasta al dente according to the package instructions.

Rinse the salmon, pat dry and drizzle with half the lime juice.

Meanwhile, wash and clean the zucchini and slice into thin strips with a peeler. Drizzle with the remaining lime juice. Peel the shallots and garlic cloves and finely dice. Wash the basil, pluck off the leaves and chop very finely.

Heat a tablespoon of oil in a frying pan and sauté the shallots and garlic cubes. Add zucchini and toss briefly, then remove from heat and season with salt and pepper.

Cut the marinated salmon into thin strips.

Strain the spaghetti, reserving a few tablespoons of cooking water. Immediately mix the still wet pasta with basil, grated Parmesan, cooking water and the remaining olive oil (2 tablespoons).

Pour pasta into deep plates, arrange zucchini vegetables and salmon on top, sprinkle with Parmesan shavings and serve.
