Pour the sparkling wine into a saucepan, add the lemon juice, orange juice and the peeled, coarsely diced kiwi. Remove 2 tablespoons of the sugar, mix with the Gelfix and stir into the saucepan with the champagne-fruit mixture. Bring saucepan contents to a bubbling boil over high heat, stirring throughout. Once bubbling, add remaining sugar. All together, stirring repeatedly, bring to a bubbling boil for about 1 minute. Thereupon remove saucepan from heat and continue stirring for another 5 minutes so that the foam repeatedly disappears. Pour the jam into the prepared jars. As soon as it starts to gel, move jars back and forth to evenly distribute the fruit pieces in the jar.

There are no limits to the variation of the recipe with pineapple, rhubarb, etc.
