Instructions:

For the spelt banana cupcakes, first sift the spelt flour and mix well with baking soda, baking powder and salt. Then mash the bananas with the help of a fork.

Then beat the butter, granulated sugar and bourbon vanilla sugar until fluffy and add the eggs gradually. Add sour cream, and finally add the flour mixture and bananas and mix everything well.

Line a muffin baking tray with paper baking cups, and fill them with the batter to about 1 cm below the rim. Bake the muffins in a preheated oven at 160 °C for about 25-30 minutes.

Then let them cool down.

For the topping, beat the butter with the powdered sugar until fluffy. Now add the food coloring and mascarpone and beat again until fluffy.

Then fill the topping into a piping bag (with star nozzle) and decorate the cooled spelt-banana cupcakes with it and garnish with hearts.
