For the spelt pan, peel and finely dice the onion. Fry half of the onion in a little oil until translucent, add the spelt, fry briefly and pour in vegetable soup. Bring to the boil and cook over low heat for about 50-60 minutes until tender, adding a little soup or water if necessary.

For the yogurt sauce, finely chop the mint. Mix the yogurt with mint, salt, pepper and a little juice of a lemon.

Wash the chard and cut into small strips. Blanch tomatoes in boiling water, remove peel and stalk and cut into quarters.

Sauté the remaining onions in olive oil, add the chard, sauté briefly and add the tomatoes, season with salt and pepper. Carefully mix in the cooked spelt.

Sprinkle the spelt pan with the feta cheese and serve with the yogurt-mint sauce.
