For the spelt stars, mash the banana (a large one) into mush and knead into a dough with spelt flour, coconut blossom sugar, cinnamon and softened butter. The dough will be a bit sticky. Chill dough for one hour.

Then roll out on remaining spelt flour, cut out discs and place on a baking sheet lined with baking paper. From the second half of the dough also cut out slices, but with a star in the middle.

Bake both trays one after the other at 180 degrees bottom shelf, top/bottom heat for about 12 minutes.

Stick cooled cookies together with jam.
