For the spice cake with wholemeal spelt flour, first separate the eggs. Beat the egg whites with a little lemon juice until stiff.

Mix the soft butter with powdered sugar, vanilla sugar and lemon zest until fluffy. Add the egg yolks and mix until ready. Mix Ovaltine and tent spice with the milk and rum, stir into the dough. Mix wholemeal spelt flour with baking powder and stir in. Finally, carefully fold in the beaten egg white.

Spread into a greased and floured baking pan and bake the spice cake with wholemeal spelt flour at 160° on sight.
