1. melt butter or light butter in a saucepan and sweat garlic and onion for 8-10 min until well lightly browned.

2. add minced tomatoes, sugar and chili sauce. bring to a boil, then reduce heat and simmer gently for 20 to 25 min until thickened and mushy.

Chop the gherkins and capers into small pieces. Add to sauce form and stir well. Make sauce at low temperature for about 2 min.

4. season the sauce with a little salt and freshly ground pepper. You can use the sauce to spread on vegetarian kebabs and burgers, or offer it with other grilled foods.

Tip: To give the sauce an appealing color, it’s important to brown the onions really well at the beginning. If fresh tomatoes are cheap and plentiful, you can use them instead of canned tomatoes. Skin 500 g and cut them off.

This sauce is excellent for coating vegetable kebabs and burgers and is quick and easy to prepare.
