Maybe your new favorite bean dish:

Soak the beans in the water for 8 hours with the lid closed.

Now bring to a boil once and do quietly with the lid closed at low temperature for 1 1/2 hours.

In the meantime, remove the peel from the onion and the garlic and chop them. Skin and dice the tomatoes. Remove the sharp seeds from the peppers.

Heat the oil in a frying pan. Fry the onion and garlic until translucent.

Add the tomatoes, the drained beans and the pepper. Sauté everything at high temperature, stirring frequently, until the liquid that has formed evaporates.

Mash the mixture, season with vinegar and salt and serve sprinkled with parsley.

Serve with pita bread or wholemeal crêpes.
