Have fun preparing this mushroom dish!

Rinse meat, dry and cut into tender strips. Rinse, clean and halve the mushrooms. Remove the skin from the onion and dice.

Fry meat in hot oil, season and remove. Roast onion and mushrooms in the frying fat for about 5 minutes. Add meat and dust with flour. Sauté briefly. Extinguish with water and bring to boil. Let clear soup dissolve in it. Cover and simmer for 5-8 minutes. Mix in creme fraiche.

Clean broccoli, rinse, divide into roses and steam in a little salted water for 8 minutes until tender. Drain apricots, collect juice, cut apricots into wedges.

Drain broccoli. Add to the ragout with the apricots. Heat briefly and season. Refine with rose wine.

Serve with sparrows.
