For spicy filled spelt pancakes first chop the onion finely, cut the remaining vegetables into very fine pieces, dice the ham as well.

Sauté the onion in a little oil until translucent, add the carrots and steam. Gradually add the peppers, ham and zucchini and mix well. When the vegetables are cooked, season everything with salt, pepper, parsley and 1 tablespoon of sour cream.

Cover the center of the spelt pancakes with a strip of the filling, sprinkle with cheese and wrap tightly. Repeat this procedure with all the pancakes. Place the filled pancakes in a baking dish, sprinkle with any leftover vegetables and sprinkle with the remaining cheese. Bake the spicy filled spelt pancakes at 160 °C for approx. 5-10 minutes.
