For the spinach pancakes, first defrost the creamed spinach in the microwave. Then quickly mix the flour with the spinach, eggs and milk. Season the dough with salt and garlic. Heat some olive oil in a frying pan and spread enough of the batter in the pan so that the pancake reaches the desired thickness. When one side is lightly browned, flip the pancake. While the second side is also browning, spread some cheese on one half. When the second side is also slightly brown, fold the pancake in half and serve. Repeat the process until the dough is used up.
