For the spinach strudel with tomato sauce, finely chop the onion and sauté in a little butter until translucent. Add the finely chopped spinach leaves and sauté.

Season with salt, pepper and the pressed garlic cloves. Allow the mixture to cool and mix with diced feta cheese pieces and skinned and diced tomato pieces and wrap in strudel sheets.

Brush with a little melted butter and bake in the oven at 200 degrees for about 25 minutes. For the tomato sauce, peel and dice the tomatoes. Dice the onion and celery as well and heat the oil.

Sauté the onion and celery first, then add the tomatoes and the tomato paste and spices.

Simmer on low heat for about 10 minutes, add the creme fraiche and simmer for another 5 minutes. Serve the spinach strudel with tomato sauce.
