For the spelt gingerbread, heat the butter with the birch sugar in a saucepan and melt slowly until the crystals have dissolved. Add the honey and in a bowl mix the flour with the baking powder and the gingerbread spice.

Add the egg and the melted mixture to the flour and knead with the dough hook of the food processor to form a dough. Add a little more flour if necessary. Wrap the dough in plastic wrap and let it rest in the refrigerator, preferably overnight. Knead well and roll out the gingerbread dough on a floured work surface.

Cut out any desired cookies and place on a baking sheet lined with parchment paper. Brush gingerbread with a beaten egg if necessary, then it browns more and gkönnt. Preheat the oven to 180°C and bake the gingerbread for about 10 minutes.
