Preheat the oven to 190 °C / gas mark 3. Heat the milk in a saucepan. Just before it comes to the boil, whisk in the cornflour. Simmer on a low heat for about 10 min, stirring. Remove the saucepan from the stove, then add the butter, salt and baking powder with a whisk until the mixture is completely smooth and the butter has dissolved.

One by one, add the yolks and whisk everything together until the spoon bread dough is smooth and creamy. In a large baking bowl, beat the egg whites until stiff. Fold the whites into the bread dough. Transfer the cornmeal dough to a well-greased baking or gratin dish (1.5 liters). Bake the bread for 30-40 minutes until it is risen and brown. Serve with a spoon. Offer additional butter.
