For steaks with lettuce, properly wash and dry the lettuce leaves. Pluck frisée, radiccio, lollo batavia and rosso into pieces of any size. Rinse the chicory, discard the stem with a sharp kitchen knife, and pluck the leaves apart. Set leaf lettuce aside in a bowl.

Heat half the oil in a large heavy skillet until hot. Add dry-dabbed steaks to hot fat and sear over high heat for one minute on each side. Reduce heat and sear meat for 2-4 minutes, depending on desired doneness.

Sprinkle with salt and freshly ground black pepper, remove from pan and wrap in aluminum foil.

Add a small amount of hot tap water to the roasting stock and allow to reduce.

Make a salad dressing with the remaining oil, vinegar, salt, pepper and sugar.

Arrange the lettuce on large, flat plates and drizzle with the salad dressing.

Remove the steaks from the foil, stir the gravy that has run out into the roasting stock in the roasting pan. Pour the sauce over the steaks and serve each with a tablespoon of herb butter and the salad.

The steaks with salad go well with French fries or fried potatoes.
