Fry the chicken breasts in 2 tbsp. hot oil for about 4 min. on each side until golden brown. Remove from the frying pan and cool a little, then cut into bite-sized slices and sprinkle with salt and chopped tarragon.

Rinse the strawberries, remove the greens, and cut the fruit into quarters. Sprinkle with the green pepper and drizzle with the juice of one lemon.

Chop the dark green from the spring onions, clean the onions and cut them into rings. Mix mustard, port wine, vinegar and the remaining oil to a vinaigrette.

vinaigrette. Cover a platter with washed, well-drained lettuce leaves. Roll the chicken in the vinaigrette and arrange on the platter. Lift the scallions once through the vinaigrette and arrange on the platter as well. Drizzle the remaining sauce over the meat and onions. As a final step, arrange the strawberries on the platter. Let the lettuce salad sit for a little while. Then bring to the table together with baguette as an evening snack.
