For the strawberry-rhubarb-apple compote, peel rhubarb, cut into not too small pieces. Peel and dice apple. Remove the green from the strawberries and chop them.

Peel some of the zest from the untreated lime and squeeze the lime. Bring water to a boil with the apple, cinnamon stick, cloves, lime zest, lime juice and sugar (or sweetener).

Just before it comes to a boil, add the rhubarb and simmer over low heat for about 3 minutes. Turn off the heat and let the strawberries steep a little longer in the hot compote.

Before serving, remove the cinnamon stick, cloves and lime peel from the strawberry-rhubarb-apple compote.
