Instructions:

First, peel the rhubarb, cover with water, boil with lemon juice, ginger and sugar for about 3 minutes until soft and let cool.

Remove the green from the strawberries, cut into coarse pieces, puree with the rhubarb compote and buttermilk in a stand mixer.

Serve the shake cold.
