For the chicken soup, thoroughly wash and clean the outside and inside of the chicken. Wash the rice and the other ingredients several times.

Pin the opening on the collar of the chicken to the body with a toothpick or meatpin.

Put the stuffing consisting of rice, 2 chestnuts, 2 dates, 2 cloves of garlic and half of the ginseng into the chicken’s abdominal cavity and close the opening carefully.

Tie the legs of the chicken together with twine in an X shape.

Place the stuffed chicken with the remaining ingredients in a pot of about 1 1/2 to 2 quarts of cold water.

Boil the stuffed chicken until it is tender. At times, carefully remove any foam that forms from the surface of the water with a spoon.

Before serving, season the chicken soup with salt, pepper and the spring onions cut into rings.
