Cut a pocket in the chops.

Heat the butter in a frying pan and sauté the onions and celery. Remove the pan from the heat and add the remaining ingredients.

Mix everything thoroughly with a fork.

Stuff the chops with this stuffing and place them in an aluminum tray with the bones down and the opening of the pocket still on top. Place the tray in the middle of the grill. The coals should not be directly under the tray, but in a circle around it. Close the grill with the hood and grill for 80 minutes.

Tip: If you don’t like raisins, just leave them out.
