For stuffed tortellini with peppers and leeks, let the tortellini soak briefly in hot salted water.

Sauté the finely chopped onion, garlic and ginger in olive oil. Add the diced bell bell pepper and let it cook. After a few minutes, add the chopped leek and sauté. Add the herbs de Provence and stir. Add some of the salted water in which the tortellini has been cooking.

Let the vegetables simmer for about 10 minutes, add the tortellini and let them stand for a few more minutes.

Stir in the allspice and serve the stuffed tortellini with peppers and leeks.
