Pasta dishes are always a good idea!

Sift the flour into a large baking bowl and sprinkle with salt. Make an indentation and sprinkle or crumble the yeast into it. Stir with 7 tbsp. lukewarm water. Sprinkle a little flour on top and let rise for half an hour in a warm place with the lid closed, until cracks appear on the surface.

Mix the flour, steam, the remaining water, the cognac and olive oil to form a dough. Continue to knead heartily for about 10 minutes until the dough is elastic and no longer sticks. Cover and let rise in a warm place for another 20-30 min until doubled in volume.

Meanwhile, for the sauce, heat olive oil in a saucepan. Add tomatoes and cook with a pinch of baking soda for about half an hour. Finely chop the garlic, add to the tomatoes with pepper, basil, salt, nutmeg, Tabasco and paprika. Simmer on low heat for another 15 min until sauce is viscous, remembering to stir occasionally.

Preheat the stove to 250 degrees.

Flour baking sheet or possibly pizza pans, roll out dough and place on baking sheet. Let rise another 20 minutes.

Mix anchovy paste with olive oil. Spread thinly on pizzas. Prick dough with a fork, spread tomato sauce evenly on top. Sprinkle with oregano.

Place drained and lengthwise halved anchovy fillets, drained and sliced mushrooms and cooked ham on top.
