For the sweet potato and carrot puree, peel the sweet potatoes, onion and carrots. Cut everything into cubes and cook in a pot just covered with salted water until soft.

Melt butter in a small pot and fry garam masala in it. Deglaze with lemon juice.

Strain vegetables and pour back into pot.

Mix in butter and crème fraîche and mash with potato masher.

Season the sweet potato and carrot puree with salt and pepper.
