For the sweet potato pancakes, peel the sweet potatoes and grate them finely.Beat the eggs with salt and mix in the grated sweet potatoes.

Form a small patty with a tablespoon of the mixture at a time. Heat olive oil, place the patties in the not-too-hot oil and fry until brown on both sides. Drain the finished sweet potato pancakes on a paper towel sheet.
