Instructions:

Toast the sweet potato slices in a toaster on the highest setting in 2 – 3 passes. Make sure that the slices do not burn. Then top with the toppings.

For variation 1, spread the cream cheese. Remove the stems from the cherry tomatoes and slice them. Place these on top of the cream cheese. Sprinkle with chive rolls and season with salt and pepper.

For variation 2, spread the cream of goat cheese. Sprinkle on dried cranberries and chopped walnuts. Season with salt and pepper.

For variation 3, sprinkle Parmesan cheese and top with bacon cubes and chives.

For variation 4, cut the flesh of the avocado halves lengthwise with a knife. Then loosen with a large spoon along the skin. Place the avocado on top of the sweet potato slices and drizzle with lemon juice. Season with salt and pepper.
