For the sweet yeast plait, put the flour in a bowl, crumble in the yeast and mix well together.

Melt the butter in the microwave. Add sugar, a pinch of salt and freshly grated lemon zest to the flour. Add the eggs, butter, honey, whipped cream and warm water and beat the dough until smooth.

Sprinkle the dough with some flour and let it rise in a warm place for about 20 minutes. Preheat the oven to 160 °C in good time.

Beat the dough again and then divide it into 3 equal pieces and roll them. Now braid the 3 strands into a plait. Let the braid rise for another 10 minutes.

Whisk the egg and brush the braid generously with it, sprinkle with hail sugar and bake for about 20-25 minutes.
