Put sauerkraut in a colander and rinse a little with water (not too much). Drain, dice onion and fry in a pot until golden. Remove from the pot.
Sear the meat in 2 or 3 stages depending on the size of the pot. Add tomato paste and fry. Add paprika powder and sauerkraut and pour in meat broth.
Simmer on low heat for about 1-1 1/2 hours until the meat is quite tender.
Season the goulash to taste and serve.
