For the T-bone steak, pat the meat dry. Then pepper and salt the T-bone steak. Heat clarified butter or canola oil vigorously until BEFORE the smoking point.
Then place the T-bone steak in the pan. Sear the T-bone steak in the pan for 2 minutes per side (for a total of 4 minutes maximum).
After turning, add the minced garlic clove and chopped shallots.
Let the T-bone steak rest briefly for 2-3 minutes and then place the T-bone steak in an oven preheated to 80 degrees (no convection) for 4-5 minutes to cook through or let it relax.
Finally, pour the melted clarified butter over the T-bone steak in the pan and serve.
