Tabboulleh: Bulgur with feta and greens.

Make bulgur (shredded, pre-cooked and dried wheat semolina) according to package directions.

Chop the onion, squeeze the garlic and mix both with olive oil, juice of one lemon and spices. Strain the soaked bulgur and add, mix.

Peel and pit the tomatoes and cut them into small pieces. Cut off both the cucumber and the pepper. Stir the greens into the bulgur and let everything sit together in the icebox for an hour.

Sprinkle with the herbs and chopped feta cheese before serving.
