For the brawn marinade:

For the boiled beef in aspic, dice the cooked boiled beef and vegetables, mix well and place in a baking dish(s) lined with plastic wrap. Heat 3/4 l of the soup.

Stir the jelling powder into the remaining soup and let it swell for about 10 minutes. Now stir the jelling mixture into the hot soup and let it boil for a few minutes.

Remove from heat and season heavily with salt and pepper and pour over the meat/vegetable mixture empty and best put in the refrigerator overnight.

For the brawn marinade, mix all ingredients together.

Sulzform overturn, remove foil and arrange on a plate, drizzle with Sulzmarinade and a little pumpkin seed oil.

Garnish with marinated lettuce and chive rolls.
